Eagle Very Rare 2025 Release 25 Year Old Bourbon

Eagle Very Rare 2025 Release 25 Year Old Bourbon

Eagle Rare 25 is a landmark release for Buffalo Trace and the Eagle Rare line—pushing the boundaries of bourbon aging while preserving balance and drinkability. It’s a contemplative, ultra-premium bourbon intended for special occasions, pourings, or tastings rather than mixing. The maturity, depth, and sheer age demand respect; the goal is to showcase what long maturation can bring when carefully managed.

Origins & Craftsmanship

  • Distillery / Brand: Buffalo Trace Distillery, under the Eagle Rare brand.

  • This is the oldest expression ever released under the Eagle Rare label—a 25-year-old straight bourbon.

  • The release is the first from Warehouse P, a specially built, experimental rickhouse intended for ultra-aging trials, with controlled or optimized conditions for long maturation.

  • Around 200 bottles were released globally (for the 2023/2025 edition).

  • It is bottled at 101 proof (50.5% ABV).

  • The presentation is extravagantly designed: the bourbon is housed in a hand-blown crystal decanter, with a sterling silver wing ornament encasing it, and a glass eagle inside.

Tasting Profile

This is from “First Taste” notes by Whisky Advocate and other reviewers.

Component Notes / Observations
Nose / Aroma Spearmint, orange citrus, oak, stewed cherries, dark red fruits, subtle butterscotch.
Palate / Taste Cherry pie, dark chocolate, baking spice (cinnamon, nutmeg), oak / barrel influence, rich fruit compote evolving to deeper notes.
Finish Long and warming: plum echoes, “rickhouse dust,” oak influence, deep fruit, and a lingering earthy / dusty note.

One important emphasis is that despite its age, the bourbon strives not to be over-oaked or excessively tannic—Buffalo Trace’s controlled aging in Warehouse P is designed to avoid the pitfalls of ultra-aging.

Food & Pairings

  • Serve / Format: Best sipped neat or with a large ice cube. Let it rest in the glass to allow the complex aromatics to evolve.

  • Pairings:
     • Dark chocolate (70% cocoa or higher) or chocolate with dried fruit
     • Nut desserts (walnut tart, pecan pie)
     • Cigar or pipe tobacco — as part of a contemplative pairing
     • Rich meats (venison, beef with a glaze)
     • Aged cheeses (Parmigiano, aged Gouda)

Because this is a high-end, aged bourbon, the food companions should be equally serious—not light fare.
